Sinodun Hill is a pyramid cheese made using a traditional making process which is slow, gentle and using the minimum of added cultures and rennet so the milk itself can really sing. Its rind is a stunning ivory colour and seasonally develops a dusting of blue and grey moulds as it ages, which add to the flavour and character of the cheese. (Pasture fed, not organic). It is named after Sinodun Hill, an ancient hill fort standing near the farm in Oxfordshire where we first created and made the cheese. Each pyramid is made with unpasteurised goat's milk and weighs 200g.
Norton & Yarrow cheese is made on Rachel & Fraser's own farm near Llangadog, in Carmarthernshire. They use goats' milk from their own herd and traditional methods to make their cheese, specialising in gentle, slow cheese recipes with the minimum of added ingredients so the exceptional quality of the milk itself is fully expressed in the flavour and texture of the cheeses. Sinodun Hill won Best  Artisan Cheese in the World Cheese Awards in 2022, as well as Best New Cheese at the British Artisan Cheese Awards 2017.Â
