Broad Beans with chilli and fresh herbs

(adapted from a recipe by Tom Kerridge)

Ingredients

·       400g broad beans, podded and skinned (podded weight 200g)
·       1 tbsp butter (or olive oil if preferred)
·       2 banana shallots, finely diced
·       1 red chilli, chopped (seeds left in)
·       2 tsp red wine vinegar
·       Fresh marjoram or oregano

Method

Add your butter to a medium hot pan then, once foaming, add the shallots, broad beans and chilli. 
Stir-fry for 1 min, then add the vinegar and marjoram/oregano leaves. 
Season to taste, then remove from the heat and enjoy with your meal.
