Chard with Feta 
This idea is adapted from a recipe by Turkish chef, Esra Muslu
 
Ingredients

  • 1 bag of Sandy Lane Farm organic chard
  • 2 tablespoons extra virgin olive oil 
  • 1 onion, diced
  • 1 bulb fresh garlic or 1 dried clove, finely sliced
  • 1 chilli, finely sliced 
  • Juice & grated zest of ½ lemon
  • 200g feta cheese
  • Salt & pepper


Method

1.    Pour the olive oil into a large frying pan on a low to medium heat.  When hot, add the onion and cook for 15-20 mins until soft.
2.    Chop the washed chard stalks & add the pan, cover with a lid and cook for 10 mins until softened. 
3.    Add the washed, roughly shredded leaves, cover the pan and steam for 5 mins until wilted. 
4.    Add ground salt and pepper to taste. Stir well, increase the heat to medium and cook for 4-5 mins until the remaining liquid has evaporated. Stir regularly.
5.    Add the chilli, garlic, lemon zest and crumbled feta, mix well, then leave to cool for 10 mins.
6.    Drizzle over the lemon juice to taste.
