Cime di rapa (Rapini)

Adds a burst of flavour to a meal as a side dish. It has a peppery, slightly bitter flavour and can be eaten raw in salads.

Ingredients:

  • 150g Cime di rapa
  • 1 garlic clove, finely sliced
  • 1 tbsp olive oil
  • Salt and pepper
  • Grated Parmesan cheese or yeast flakes


Method:

  1. Wash the cime di rapa and drain but not too thoroughly
  2. Warm a pan on a medium heat and add a tablespoon of olive oil
  3. Add the finely sliced garlic and adjust the heat so that it starts to sizzle (but not burn)
  4. Add the cime di rapa and stir fry
  5. Cover with a lid and cook for about 4 minutes or until it is bright green and glossy
  6. Add salt and pepper and grate over the parmesan cheese/sprinkle the yeast flakes, to taste
