
Easy Spring GreensÂ
Spring greens are very easy to cook and have a wonderful natural flavour.  No need to waste any leaves that are starting to turn yellow on the edges – they are perfectly fine to eat.Â
Ingredients
1 bag Spring Greens
1 – 2 tbsp olive oilÂ
1 stem of fresh garlic (or a 1 clove garlic) finely sliced (optional)
Salt & pepper
Method
-Â Â Â Â Â Â Â Thinly slice the spring greens, including stalks but not the thick stem.
-Â Â Â Â Â Â Â Wash thoroughly and leave in a large bowl of cold water.
-Â Â Â Â Â Â Â Heat the oil in a large pan, add the shredded greens so that they are sizzling, then add the sliced garlic and stir.Â
-Â Â Â Â Â Â Â Stir fry for 5 mins, add about 50 ml water then turn down the heat slightly and place a lid on the pan so that the leaves continue to steam.
-Â Â Â Â Â Â Â Stir again after about 5 minutes. The leaves should be soft and glossy and slightly caramelised.Â
-Â Â Â Â Â Â Â Season with salt and pepper to taste.Â
