How to cook Gem Squash

These small, round, green gems are so popular with our customers from Southern Africa and anyone else who has had tried them!  If you are new to gem squash, this is a base recipe to get you started.

Ingredients

4 gem squashes one per person
1 tsp salt
80g butter or (vegan alternative to butter)
2-3 tsp sugar or maple syrup (optional)
Grated cheese (optional)

Method

  1. Prick each squash 6 times with the end of a sharp knife or twice with a fork.
  2. Boil in plenty of salted water for approximately 25 minutes if fresh. Allow a bit more time for mature/stored and larger squashes.
  3. Once cooked, cut in half and remove the seeds with a spoon.
  4. Put the butter on both halves of the squash and mix with a fork.
  5. Season with salt and add sugar/maple syrup if you'd like to.
  6. Grate over some cheese if you'd like it.
