We are extremely proud of the flavoursome mixed salad leaves grown at Sandy Lane Farm. At least 10 different herbs, leaves (and flowers in the summer months) are included in the mix, packing each salad bag with a peppery punch. The leaves are delicious eaten on their own but if you’d like a dressing, you can’t go wrong with this easy recipe, using local honey from Parslow Apiaries in Bledlow. 

Ingredients
 
·      1 bag of Sandy Lane Farm mixed salad leaves
·       1 tbsp clear honey. Local honey is easy to find. We use Parslow Honey as they have hives on our farm as well as on other farms all over Buckinghamshire
·       ½ tbsp wholegrain mustard 
·       the juice of ½ lemon
·       3-4 tbsp Rapeseed Oil 
·       Salt & pepper
 
Method
 
1.    Wash the salad leaves thoroughly.  Spin dry in a salad spinner (or shake off excess water) & set aside
2.    Add the honey, mustard, lemon juice, rapeseed oil and salt and pepper to a jar, put the lid on tightly and shake well until mixed to a make a smooth dressing. Taste & adjust seasoning if required
3.    Place the salad leaves in the large bowl & drizzle with dressing
