Leeks take on a sweet, mellow flavour when roasted.
Ingredients:
3-4 leeks
Olive oil
Salt & pepper
Grated parmesan
Method
Trim both ends of the leeks, chop in half & then cut in half length-ways. Rinse any mud out and leave to dry.
Oil an oven proof roasting dish & place the leeks cut side down. Drizzle generously with olive oil then season with salt and pepper.
Roast at 180° fan oven/gas mark 6 for 20-25 minutes. Take out & turn over so that they are now cut side up.
Grate parmesan cheese generously over the leeks and continue roasting for another 15 minutes until golden and caramelised and soft enough to insert a knife easily.Â
