
This easy recipe adds a fresh and crunchy sweet and sour addition to any meal. Mixing green and yellow cucumbers also adds interest.
Ingredients
· 1 large or 2 small cucumbers, thinly sliced
· 1 tsp flaky sea salt
· 1 tbsp white wine or apple cider vinegar
· 1 tbsp caster sugar
· ½ tsp coriander seeds
· Chopped dill, to taste
Method
1. Cut the ends off the cucumber, slice thinly (use a mandolin if you have one) and toss with the salt in a colander.
If the cucumbers are very seedy, you may want to cut in half lengthways and scoop out the seeds before slicing.
2. Leave for about 15 mins then squeeze out the excess moisture with your hands and pat dry with a tea towel.
3. Mix the other ingredients together in a small bowl then stir in the cucumber.
4. Eat straight away or keep in the fridge until needed.
