Pickled Red Onion

Brightly coloured, mildly pickled onion adds a sweet & zingy flavour to sandwiches, salads and slow cooked meat dishes.

Ingredients:

  • 1 large or 2 small red onions, thinly sliced 
  • 350ml boiling water
  • 1 tsp sea salt
  • ½ tsp dried oregano
  • ½ tsp fennel seeds, lightly crushed 
  • 2 tbsp cider or white wine vinegar
  • Juice of 1 lime

Method:

  1. Peel & thinly slice the red onion.
  2. Place in a shallow bowl or plastic food container, pour over 350ml/12fl oz boiling water and leave to stand for 10 minutes.
  3. Drain and return the onions to the bowl/container and add the salt, dried oregano, fennel seeds, vinegar and lime juice.
  4. Mix well and you will immediately start to see the onions turning pink. Cover and leave in the fridge for 1.5-2 hours so that the onions can thoroughly pickle.
  5. Keep refrigerated in an airtight container for up to 3 days.
