
Roast Jerusalem Artichokes

500g Jerusalem artichokes
2 garlic cloves, crushed
Olive oil
Salt and pepperÂ
½ lemonÂ
1 tbsp flat leaf parsley, roughly choppedÂ

1. Preheat the oven to 180/Gas mark 4. Scrub the Jerusalem artichokes and cut into diagonal slices about 2 cm thick.Â
2. Place on a baking tray, drizzle with olive oil, add the crushed garlic and season with salt and pepper. Mix so that the artichokes are well covered and put in the oven.Â
3. Thinly slice the lemon (remove pips) and after 30 mins, add to the baking tray, stir and place back in the oven for about 15-20 min until the Jerusalem artichokes are soft and caramelised around edges.Â
4. Remove from the oven and stir in the chopped parsley.Â
