Roasted ‘Wet’ Garlic Bread

Fresh or ‘wet’ garlic is the first of the crop that comes through in late spring, early summer. It is slightly milder in flavour than the dried garlic that we’re used to later in the year. 

Ingredients
·       1 fresh garlic bulb
·       olive oil
·       Slices of toast/flat bread & butter
·       Grated cheese (Parmesan or cheddar or use up what is in your fridge) 
·       Salt & pepper
 
Method 

Heat the oven to 200°C / 180°C Fan / Gas mark 6
1.    Trim the stalk of the garlic to about 2-3 cms above the bulb.  Wash & cut in half lengthways.
2.    Place the garlic in a small roasting tray, drizzle generously with olive oil & season with salt & pepper
3.    Roast in the oven for 20-30 mins until golden & very soft. 
4.    Squeeze the garlic out of the bulbs and mash with a fork. 
5.    Lightly toast some bread/flat bread, butter it & thinly spread the garlic over it. 
6.    Sprinkle with grated cheese & grill until the cheese is melted and golden.
