Stir-Fry Mustard Greens

Mustard greens grow prolifically in our poly tunnels on the farm. They are wonderfully peppery and quick and easy to cook as a side dish.

Ingredients

  • ½ red or white onion, thinly sliced.
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic, crushed/finely chopped
  • 200g (1 bag) SLF mustard greens, washed, large stems removed & leaves torn into large pieces
  • 1-2 tablespoons vegetable stock
  • Salt & pepper to taste

Method

  1. In a large pan, sauté the onions in olive oil over medium heat until the onions begin to brown and caramelize, for about 6-7 minutes.
  2. Add the garlic and cook another minute.
  3. Add the prepared mustard greens and stock. Cook until the mustard greens are just wilted.
  4. Remove from heat. Stir with make sure the onions & garlic are mixed through and season with salt and pepper.
